im thinking of having a go at making cinder toffee and fudge to go on my candy cart at our uk evening do has anyone else had a go at making these??
here are the recipes I have so far if you also feel like having a go:
Cinder Toffee
ingredients Serves: 15 500g caster sugar 225g golden syrup 2 tsp vanilla 90ml water 1 tbsp bicarbonate of soda
Recipe
1.Grease a 20x30cm tin, then line the bottom and sides with baking parchment, making sure the parchment sides are at least 5cm above the sides of the tin. Grease the parchment with a little more butter or oil.
2.Add sugar, golden syrup, vanilla and water to a deep, heavy bottomed saucepan. Bring the mixture to the boil, but do not stir. Boil until it reaches the hard crack stage (the temperature on a sugar thermometer reads 149 - 154 degrees C), about 10 minutes. During boiling, if there are any sugar crystals on the sides of the pan, brush the sides of the pan with a clean pastry brush dipped in water.
3.Remove from heat and working quickly, add the bicarb, whisking to incorporate. The mixture will bubble when adding the bicarb, so mind the hot toffee. Immediately pour into the prepared tin. Let cool and set completely before touching. Break into pieces and serve. Store at room temperature in an airtight container.
1. Place the ingredients into a large non-stick saucepan and melt over a low heat, stirring until the sugar dissolves.
2. Bring to the boil then simmer for 10-15 minutes, stirring continuously and scraping the base of the pan. Take care while the mixture boils and during stirring as the fudge will be VERY hot! To test its ready drop a little of the mixture into a jug of ice-cold water. A soft ball of fudge should form. Or check with a sugar thermometer if you have one (approx 118°C).
3. Remove from the heat and beat the fudge until very thick and starting to set (about 10 minutes).
4. Pour into the prepared tin and leave to cool before cutting into squares.

Mouth is watering just thinking about fudge, its one of my favourite things hehe :D
Not made either myself hun but one of my besties does all sorts will ask her for a recipe see if it differs from yours :)

thank you sparkles hun im also gonna make mini chocolate slabs some with nuts and fruit others with cherries and some with marshmellows which I cant wait to try but the chocolate is about £20 so its just getting spare cash to have a go x

i did cinder toffee a few times it worked well, i suggest doing it a few times to get the knack though! :D xx
