Hey, I've been three times (2009, 2010 and 2011) and we're going back for our honeymoon in October. On our previous visits we stayed at the Excellence Riviera Cancun, the Valentin Imperial Maya, and the Royal Playa del Carmen, and for our honeymoon we're spending 10 nights at the Bahia Principe Sian Kaan in a penthouse suite and then 7 nights at the Excellence Playa Mujeres in a swim-out suite.
We don't book with the big tour operators; we use a company recommended to us on a travel forum. We've travelled with them 4 times now and have booked with them again for our honeymoon. They can always at least match the prices of the major tour operators, if not beat them, their transfer prices are great (about 1/2 what you'd pay elsewhere), and their knowledge of the hotels and their customer service is second to none. They can also often get deals at certain hotels eg free room upgrades, honeymoon packages, free private dinner on the beach, etc, and have way more hotels to choose from than the bigger tour operators. We paid £3900 for our honeymoon and that includes flights from London, 10 nights in a penthouse at the Sian Kaan, 7 nights at the Excellence, plus private transfers throughout. I would highly recommend them.
If you want any more details or info on anything from the weather to the currency to tipping, or the hotels we've stayed at, give me a shout. We've also done quite a few of the popular trips (Coba; Tulum; Chichen Itza; Selvatica; speedboats and ATVs; dives; snorkelling) so again I'm happy to give you any info on those :-)
Mexico is great value for money, though I'd def try to stay at one of the more luxurious adult only properties if you can, as, while they're a bit more expensive, you do get a lot more for your money in terms of amenities, food and drinks, etc.

I went to gran bahia principe, riviera maya and stayed at akumal all the resort is one akumal, tulum, coba and sian kaan. We got married while there and I have to say it is amazing, our villa overlooked the beach and sea so the sunrise was breath taking to watch. You can go to any of the lobbies for food and drink and use all the pools we found the coba pool to be the best as it was more child active and friendly for our son. We went out on a day trip to playa del carmen but I have to say once it gets dark it is pretty scary, heres a couple of snaps from round the resort hope they help xx
