    right girls,
    I hate going on a diet as I tend to stick to the same foods and its gets boring. I have been asking a few of you for your recipes but they are on several different threads. I thought it may be beneficial to have a low calorie meal thread... just one thread with useful receipes and ideas to help us for that dreaded honeymoon bikini or those who want to lose lbs for the dress.

    It doesnt matter if its just low cal, weight watchers or slimming world and it doesnt even need to be a full receipe... maybe just a quick overview.

    This would really help me and hopefully the rest of you getting stuck into a rut and then going off track as it will keep things varied.

    ok so some low cal meals I do:

    1. 80g King prawns (raw), with 100g wholemeal pasta, and half a jar Lloyd G tomato and chilli sauce. Simply fry the prawns in some fry light on high heat when your pasta is nearly ready. Maybe but in some garlic and soy sauce. Then put the sauce on the top and when the pasta is done, put the pasta in the pan for a min or two. This works out 510 cals and is 15 pro points x

    Root vegetable curry soup is good and filling too - i normally go for carrots, parsnips, squash and sweet potatoes, boil them then add curry paste

    or a root vegetable crumble, same veg, dry roast for 20 mins or so, add some stock with some herbs (rosemary is good) process some bread to crumbs, add some oats and cheese ( i like blue cheese but cheddar or parmesan are good too) and put on top

    Vegetable chilli is good too, you can either use quorn or just vegetables and pick a few different pulses
    (using quorn in dishes that use mince is really good - spag bol, cottage pie etc)

    2. Lean lamb caserole for two.
    I get 340 g lean lamb, and put that in a large pan, after that is browning off nicely, I put in garlic, mint, carrots, peas, mushrooms, and then add in some minted lamb gravy and simmer. I serve this with 150g baby pots and caul and broccoli. Not sure what the calories are but it was under 5oo and not sure the ww points either as I havent calculated them yet but its gooooooood!

    3. Thai pork curry for one:
    100g lean pork (140 cals), s.woods thai red curry sauce and use a third (105 cals) and a bag of 62.5g u.bens rice. You could swap this for brown rice. And I put in some mushrooms and red pepper. Lush. I lost lots of weight eating this. 11 pro points and approx 450 cals

    I like the idea of the chilli and the curry soup. Tonight hubby to be is cooking. He is giving me 100g gfu beeg steak, with baby jaackets with garlic butter and veggies. Will work out the cals and pro points after he is done and edit this post.

    One night this week I am also going to try the beef again but with creamed mushrooms which are low cal for half a can and rice to try and make a cheat version of a stroganoff even tho it wont taste the same but its different.

    If you like sweet things
    Roast strawberries and rhubarb with the juice of an orange and vanilla (from a pod if poss) and a bit of sugar, makes a lovely compote to have with yoghurt or low fat creme fraiche
    Or de stone and half plums, add the juice of an orange, some honey, star anise, cloves and cinammon and roast

    I have a book called skinny meals in heels which is good for low fat recipes

    I have just made a fantastic (if I do say so myself) WW zero point tomato soup, it is so easy all you need is (you can add more if you want)

    4 carrots
    4 onions
    1 garlic clove
    2 tins of chopped tomatoes
    1 pint of chicken stock
    1 tablespoon of tomato puree
    1 tablespoon of Makway curry powder (this is 1 propoint but it goes across 8 - 12 servings usually so doesn't count as anything unless you eat the whole pan in one day lol)
    Salt and pepper to season.


    Chop onions and carrots into chunks, fry onions in low cal spray, add garlic then carrots when softened. Fry until carrots take on a bit of colour and start to soften slightly. Add in the curry powder and stir in well. Add tomatoes, puree and stock and season. Bring to the boil then simmer for 20 mins until veg is soft. Let it cool then blitz to your liking.

    I have a dairy allergy so a lot of things I have to avoid - I'm a nightmare to shop in supermarket with as I read every packet of anything processed so it's mainly fresh veg and chicken/fish/prawns for me.

    My fave homemade salad is:

    1 red onion finely chopped
    2 or 3 peppers (red orange and yellow) chopped
    1 whole cucumber cubed
    a whole packet of baby plum tomatoes
    a whole large can of sweetcorn
    1 can of butter beans
    1 can of chick peas
    Some cous cous (200-250gms)
    half a jar of artichokes
    half a jar of sundried tomatoes

    NO DRESSING REQUIRED AS IT'S TASTY ENOUGH WITHOUT!

    This makes 4-5 portions that I pop into boxes and take into work with me. They keep in the fridge for 5 days so I tend to make this all on a Sunday ready for the week. Sometimes I put some homemade roast chicken (minus the skin) or some smoked salmon in with it. Smoked sausage chopped up is nice in it too but that adds approx 250 cals so I only have it occassionally as a treat.

    Roast tomatoes and peppers (any size toms, ripe to over ripe, vine are best but ive done it wit all types, best to not use green peppers but red orange or yellow are fine, the sweeter the better) drizzled with some honey and balsamic vinegar and a little bit of olive oil, if you like it hot you can add in a couple of chillis and roast them too (low heat abot 140-160C for 45 mins to an hour)

    Ones they are cooked transfer them to a big pan, i then tend to add in a tin of chopped tomatoes or a carton of passata to bulk it out a bit, and add stock to cover them all. Then add some black pepper, a couple of teaspoons of cinammon, and mixed spice, and some cayenne pepper ( again add how much depending on how hot you want it) and half a teaspoon of cumin powder and a tablespoon of honey. It doesn't need long to cook once its out of the oven, 10 mins should be enough, then blend it all and enjoy, it freezes well

    I eat a lot of spiced food so tend to play around with the spices quite a lot, i'm also rubbish with quantities so they are very rough and if you'd prefer a more traditional soup you could switch and put in basil or oregano :)

    sweets- now i have your attention :)

    SW sweets,
    one sachet of sugar free jelly crystals (i dont know if it works with jelly cubes)
    add 200ml boiling water and a sachet of gelatine (found in baking section of most supermarketss at 69p)
    IF it still has lumps in blast in microawave 30 seconds.
    Put in a long tray that isnt very deep (unless you want it deep) and chill until set.
    Then cut into whatever shapes you want and eat.

    Theyre not quite like harribo style jelly sweets but are gorgeous and only 2 syns a serving (Sorry ladies i dont have a clue what that is in ww etc)

    we make tonnes of soup my fav is sweet potatoe and butternut squash.
    We also make
    veg,
    parsnip
    tomatoe,
    chicken and sweetcorn (not sure if the corn is bad as it is creamed corn)
    broths

    we love pasta, mine obviously wheat free!

    frittatta - cant remember syns but it isnt much.

    cut and dice some potatoes (i literally bung in however many i feel like) and onions, cook until sot. whisk 4 eggs and a little milk, cover the potatoe and onion cook until set.

    you can vary the contents, cottage chees is actually GORGEOUS in this, you can add any veg you want, tuna, chicken anything really.

    we substitute our meat with quorn as far lower in fat, and we use fry lite not cooking oil.

    my lunch today is NOT particularly diet food.......but if I eat a meal like this I wont pick for the rest of the day because its so filling.....

    Roast Chicken,
    roast potatoes and parsnips
    Stuffing
    yorkshire pudding
    leeks
    broccoli/carrots/cauli

    With the left over yorkshire pudding batter I am gonna make a pancake with lemon juice....no sugar....(i never do have sugar on them)

    Quite healthy, (apart from the roasties, and stuffing) and it will fill me up til tomorrow

    oh that sounds nice. shame im not allowed it. I HAD TO MAKE DO, when we went out today. Normally I have a tuna and cuc s.wich from boots or asda for 7 points or about 250-275 cals but the boots in the place and the sains were naff..... I had to settle in the end for a full fat egg mayo one... I was gutted. I even had a look to see if there was anything else I could eat on the go and other than a snakc wrap thing thats full of processed rubbish there wasnt. I have therefore been forced to use the full 29 points but before I stopped going to meetings I thought this had been reduced to 26 which will mean I am therefore over. Grrrrr

    ok I dont know if its mush strog or verging on a risotto haha but it tasted quite nice:

    half a can of creamed mushrooms,
    100g lean beef steak,
    half a knorr dissolvable stock,
    extra fresh mushrooms,
    herbs and garlic,
    small bag rice

    Basically get the rice on the go and use fry lite or something similar to fry the steak after you have chopped them into small pieces. Add the seasoning and the extra mushrooms.
    Then dissolve the stock and add to the beef. Cook on high heat to reduce.
    A few mins before you are due to serve, add in the half tin of creamed mushrooms and heat until its all mixed through and had time for flavors to settle.
    Pour onto rice and serve. It was lush.

    I used beef stock but I was told to use veggie.
    I think the whole meal came in at approx 420-430ish cals

    I have half a tin of creamed mushrooms left. Any idea what I can do with them tomo. I was thinking of a recipe I saw at our wedding venue which was a piece of nice toast (though I may use a pot waffle shhhh) with a creamy mushroom sauce on top and finished with a poached egg on top of that. Thats all I can think of.

    I did think of using it to do a spin on carbonara but I think that will be too many ww points as although the can of creamed mush is only 118 cals for half a can, its 6 points to my shock......add 10 points for pasta and then chicken on top it will be unfeasible.

    Also still need a way of making low fat pesto as I really want it with pasta and pine nuts. Dont like store brought low fat pesto but is there a way I can make my own that still tastes nice?

    for lunch today i had jacket potato with lettuce cucumber carrots and sweetcorn and a dab of butter in the potato and light salad cream over the salad

    as we speak h2b is making a home made healthy sausage casserole for dinner tonight he said he will type the recipe up for me

    tomorrows lunch is jacket potato again and for dinner it is chicken breast , fluffy mashed potatoes, broccoli and cauliflower

    I need inspiration for tomo lunch incase I get caught out again. As I said, I normally buy a 250 cal butty from sain, bo*ts or a*da but what can I eat thats similar calories incase I cant find anything again like today?

    dave ended up with a saussage roll and bag of crisps..... hes not happy he had to resort to that but he only eats ham butties but given hes a man, the increase in calories wont do much to him.

    All this food talk would normally make me hungry apart from I've eaten loads today! You'd all be disgusted with me ;)

    Little changes can make a huge difference, instead of buying tuna in brine or sunflower oil buy it in spring water (much healthier), don't buy supermarket sausages not even the fancy expensive ranges as they still contain a lot of fat an grisle, you can tell when you grill them as it all comes out, I will only go to my local butchers as their ones are so lean and taste so much better. Remove skin from roast chicken. Replace beef/lamb mince with turkey mince. Steam food rather than roasting or frying (the trick is to marinade meats/fish for good taste).

    You can buy cheap rice cookers from that high street retailer that you order from a catalogue. Some have steamers within them, so if you marinade your meat or flavour your veg, you can steam this over your rice as it all cooks perfectly and the juices cook into the rice, it's delicious!

    sausage casserole

    Serves 2

    INGREDIENTS

    2 carrots
    2 medium sized potatoes
    1 small onion
    4 good quality (e.g. butchers) sausages
    200g (½ a 400g tin) of chopped tomatoes
    1 beef stock cube into 250ml of water

    METHOD

    Peel the carrots and dice. Peel the potatoes and dice them into 2 cm (1 inch) pieces. Dice the onion

    Put the sausages, onion, carrots, potatoes, beef stock, and tomatoes into a large ovenproof dish with a lid. Stir thoroughly. Put the lid on the dish.

    Cook in a preheated oven at 150°C, 300°F, gas mark 2 for just under 2 hours. Check the liquid level from time to time and top it up if it starts to dry out.

    can be served with a green vegetable, or add 100g of peas 15 minutes before the end of cooking.

    Yesterday while I was getting dinner ready and without even thinking, I reached into the biscuit jar for a penguin.......then I remembered and let go of it......half the time with me it habit, not because I am hungry. I didn't miss it.
    Today I am having a salad and some of yesterdays left over chicken ......but I usually have chips with my salad.....but not today.....

    I think habit is definitely part of it for me, I was in a right grump on Saturday as I have given up alcohol for a few weeks as it really is just empty calories. I never drink in the week so thats fine, Friday was ok as we went to the cinema but on Saturday I was miserable as I would always have a glass of wine if we didnt go out.

    I made fennel and apple soup for lunch today :)

    Thats where its going to be hard for me, because I dont drink at all......all of mine is food.
    People that go on a diet, when they cut out the drink they lose loads, but I dont have that , its purely food....cake in particular!

    I'm the same as you RaggedyAnne - I'm tee total too. I'm also allegric to dairy so don't have that to cut out either. They're the two main things that people cut out or down on to lose weight.

    I just try to be careful with the way I cook like not using too much oil.

    Ladies - you can still have chips! Just make them yourself - I eat chips/potato wedges but they're homemade so I know exactly what and how much seasoning and oil is used and then bake them in the oven rather than deep fry. If you use a little garlic salt, sprinkle of paprika and some cracked black pepper they're delicious (even H2B likes them), remember to keep the skin on as that's where a lot of the nutrition is and also saves time as you don't have to peel them. 45 mins in a hot oven and they're perfect ;)

    My big downfall is crisps! I can munch through a family size bag so easily in about 15mins!
