is this normal? She said the marzipan gives it a base but I have never heard of marzipan and choc before. She said she can do it with two layers of icing but its not what she recommends? How do I turn this into a poll btw?

I think that's normal way to do it but I could be wrong.. it's more almond paste than marzipan, it just keep's the icing on and make's the sponge stay fresher and softer and it will be a very thin layer. I expect you've had cake with it on before but just not noticed as it does tend to be very thin x

Oh and it helps for stacking or tiers, just gives it extra strength so the other tiers don't sink and crush the bottom one

LoL!! My brother in law had guiness cake (i think thats what its called) and it was covered in marzipan and then a layer of icing and you really couldn't tell or taste it. It should be fine!

Without the layer of marzipan the icing wouldn't look smooth. It helps form a smoothing layer for the icing. The marzipan like the icing is more for function than taste. If you really don't like the idea (I promise it's fine) ask if she could uses a chocolate sugar paste/ pastelage instead if marzipan, I personally don't like it as it tastes a bit synthetic as it's chocolate flavouring but some cake makers swear by it xx
