    I am making my cake today......its a fruit cake so its good to make it in advance. then tomorrow I will marzipan it, then wrap it and leave it to set a bit.....then next month I will ice it.....

    Thank you.......My wedding cake....2 tiers, and 24 mini cakes as favours....will have cost under a tenner to make. because I will only need 3 of the cake mixes. then there is the decorations I have bought. not too shabby

    Good Luck!! It's hardly cheating! You're still putting it all together, icing etc. You've more balls than i have! I made my boys christening cakes and that was too mcuh pressure.

    Cant wait to see pics of the finished article!

    well its in the oven........it'll be ready to come out at 8.15

    I made a little one as a tester aswell......
    I know it seems silly to cook it for 4 hours then another one on another day......8 hours cooking time in total....when I could have done both layers at the same time, but I wanted to see if it is ok first before making it all

    I never thought all this fruit was going to mix in......but my mixer did a grand job

    and here it is ready to go into the oven.......with the baby one aswell. (the little one wont need 4 hours so I am putting it in for the last hour of cooking time)

    The next layer I make I am also making the small one again, and icing for my friends at work. It will be a mini version of the real cake.

    For the people that dont like fruit cake, I am also making cupcakes or a seperate sponge cake.......but I am baffled with the flavours.....these are the flavours I love......

    If I make a large sponge i will only make one, or I could make cupcakes in all of these flavours? decorated in a vintagey way?

    Red Velvet with cheese frosting
    Plain cake with Buttercream
    Orange cake with buttercream
    Carrot cake with cheese frosting

    I fancy a 2 tier fruit cake, then some cupcakes by the side......

    Those vintage cakes are lovely, I think cupcakes would look good with the cake - i'd eat any of the flavours
    The biggest problem I have with cakes is icing them, definitely not cheating to get mixes!

    hey chick!!! dont marzipan it straight away give it about 6 weeks to settle and let it mature a little, soak it every week with 2-3 tblsps of brandy......then marzipan and ice it.....use apricot jam to stick the marziupan on with and vodka to stick the icing to the marzipan as water will eat into the icing....good luck!!! x

    looks good! and cupcakes look great either side of the main cake, i'd go with plain sponge just to make things a bit easier on yourself as you have soooo many other diy projects going on. and pretty much everyone will like plain sponge.

    A little tip i picked up is to make a slight dip in the centre of the mixture before you put it in the oven as it then ends up with a flat top, rather than the slight dome you normally get. easier to ice and a bit tidier looking in the end then :)

    My xmas cakes are always Delia's recipie (but with more brandy) - I'm fine making the cake but I'm pants at icing it - unless of course you want snow scenes :)...

    Well I tried it this morning, cut a tiny bit out of the centre. its a bit dry. And to be honest I dont know if i like it....
    and to keep trying again and again with each one taking 4.5 hours to cook, its gonna cost a fortune in electric.

    Soooooo, I might change my mind and do a 3 tier sponge.....i KNOW I can make a great sponge cake/

    I am thinking of 3 different flavours.....

    large tier vanilla with buttercream
    middle tier red velvet and cream cheese filling
    top tier carrot cake with cream cheese filling

    I also know that any remaining cake WILL get eaten......so thats a bonus I suppose.
    I will still decoorate it the way I originally planned to.

    I also think that if my guests do hang around after the wedding, they can have some more cake.....

    I like fruit cake, and I bought it cos the mixes were on offer.....and it made it cheaper than making a sponge cake.
    Oh well. I can use the packets of marzipan, and the icing sugar, the brown sugar and the flour, so it wont really go to waste....its just the fruit wont get used which is a shame.....but maybe put it out for the birds.

    Can you pour brandy over the tiers and leave it to soak to make it moist?

    I'm having a fruit cake, three tiers but the MIL2B has made them a little thin - 2.5" thick for each tier. Well my friend is saying that is too thin - I really dont have a clue if it is or not........ if it is too thin any suggestions for separators or pillars that I can use to make the cake taller but will work with fruit cake? I am a total novice at cake making and dont want to ask the MIL2B as she's getting on my nerves at the mo and if I say the tiers are a bit thin it will make it worse! The tiers are 13", 10" and 7" xxx

    lilmischuckles....No its OK thanks, I only was making fruit cake because I got the ingrediants cheap.
    The cake wasnt TOO bad, but I think somewhere along the way....I changed my mind, so when the cake came out a little bit dry, it was easy to say F*** it!

    Now that would be worth having thanks chucky......I would love it.

    What do you put on yours? the only thing I really like on it is cream cheese filling....buttercream just doesnt seem to work with red velvet cake.....

    @joanna, I intend to make them a month in advance and put them in the freezer, then get them out to ice. the actual sponge freezes very nicely.
