Unfortunately our evening venue will only let us use there 'recommended' caterers which I'm a bit gutted about as personally I know I could have for a better deal. However, what we've got for the evening buffet is:-
Variety of sandwiches, sub rolls and baguettes (roast beef with sundries tomato and horseradish, Yorkshire hand cut ham with salad, smoked salmon and cream cheese, four cheese savoury with lettuce) Variety of quiches and flans (feta cheese and spinach, ham, leek and tomato and cheese and tomato) Chicken satay platters with dipping sauce Vegetable and meat samosas Chinese style spring rolls Variety of kettle crisps
This is for £9.60 a head - however the price for this per there website was nearly £15 per head so I will be saving almost £500 on the website price...I still know I could have got it cheaper with a different supplier but like I say our hands are tied...and to be fair I have been at functions where they've done the catering before and I was quite impressed, so not majorly upset about that.
Will this be enough? I can't remember how many different items there have been at buffets I've been to, baring in mind the reception starts at seven thirty and half the guests will have already had canapés and a three course wedding breakfast. Xx

We're also having a choice of 6 items, though may up this to 8 as like you we're worried about variety. But honestly, I think 6 is more than enough, and you have a good selection there inc vegetarian options. Only comment I'd make is that to me the chicken satay, samosas and spring rolls don't really 'go' with the other items, and I personally would probably have all 6 tie-in together, or, go with an Indian/Chinese theme for the last 3 eg chicken tikka rather than chicken satay, and onion bahjis or vegetable pakora rather than spring rolls. But that's probably just me being weird lol

That sounds like a good selection, as long as you've accounted for any food allergies. We have to cater for three guests with gluten intolerance, one of whom is also intolerant to dairy and sugar. Plus two vegetarians.
30th August 2014 was the best birthday ever.
It was the day that I became Mrs. Dixon.

sounds more than enough - don't forget that you don't have to cater for all of the people in the evening - my venue suggested 80% (so 80 out of 100)
mmm beef and horseradish sammiches :)

Sounds more than enough hun! People will be grazing whilst its out, its not meant to be there to fill them entirely up!! When are you cutting the cake? we are doing ours in the evening as part of 'pudding' after the buffet has been cleared away!
Like LynD our venue have explained that you pay/cater for 80% of the guests. everyone gets to eat but your only forking out pennies for 80% due to the fact some people will have eaten teh wedding breakfast and be full, some people only coming to the evening may have already had something during day, some people only pick and graze so dont get a full 'portion' as such etc.
Sounds reasonable to me! xx
