Probably a stupid question but do any of us need ID to sign the register? Do H2B and I need ID with us? What about the witnesses? (MoH and Best Man)? Do they need any kind of ID to sign it for us?

You need your passort and either driving license or utility bill as proof of address when you give notice but on the day no ID is required by you or your your witnesses. You sign with your maiden name.
The registrar will send you letters and leaflets with all the info you need when you call to book your date.

I wondered about whether to sign maiden name or not as well lol, I assumed we wouldn't need ID on the day as they check that when you book/give notice ect.

You sign in your maiden name and don't need any ID...or at least, we didn't.

Does my name automatically change on the day? Or do I have to apply for it or something? Do I just use my wedding certificate as I'd to change bank cards and driving licence and the like?
