just back from a local cake makers who also seels a few bits and pieces
i have come home with a 5 tier extra deep dummy cake set all the tools and turntables etc i need 3kg of ivory icing a 10kg bag of maderia bakers cake mix that has a shelf life once cooked of 14 days all you do is add water the hire of 2 cake pans spacers all the boards and boxes to transport dowels and enough butter icing for the lot
and a lesson on how to make the perfect cake mix flavored and coloured or choclated up
all for £146.92!!!
and that will have me a very large 5 tier wedding cake all done... and he said will take me less than an hr to bake the cakes as all you do is add water( it the same mix every cake shop uses for wedding cakes ) and each tier to ice prob an hour also!!! he told me to make the sponges.. freeze them get them out the week before the wedding to ice and it will still have a 14 day shelf life!!!!
the origional cake price which was £850 saving me £703.08... flipping bargain
and best part is .... i can have the cake i want without having to justify or compromise with what to have i can have what i want :O)
plus he said any probs ring him and he'll help me out
plus also said anything i dont use he will buy back including the cake dummies at the end!!!!!

SS its the industry standard maderia dry cake mix... the only way they can do a 14 day shelf life... you just add water... its always light and fluffy .. doesnt change colour on the outsides etc etc ... they flavour it with essense and colourings ... but basically its what 99% use!! i was a little shocked but at the end of the day understand why they do it .... quick simple full proof and gives a week to decorate it knowing theres a week left for the cake to be in top condition!! i never knew this until today!!

I'm sorry I have to jump in here. As lovely as I'm sure your cake will be, I think you're doing (perhaps a small group of) cake makers a disservice.
As a professional cake maker, I would be happy to invite anyone to our cake shop, where it's obvious from both the tase of our cake and the huge amount of ingredients, that we don't use (horror of horrors) cake mix. It's essential to use tried and tested flour, eggs, fine sugar, and butter. Why? Because although some unscrupulous cake makers think that you're a one-time-only customer and they will use this opportunity to separate you from your cash, we feel it is not the case.
Our philosophy is still business led (we aren't a cake charity :) ) but if we use the best ingredients, and make the cake for you, your guests will love how good it looks and tastes, and will perhaps use us when it's their turn, and our brides invariably then recommend us or use us again for the inevitable christening cake or birthdays etc.
I just thought I'd point out that you didn't go to a representative of the good side of the cake industry, you went to the wrong cake maker.
As for making it yourself, I hope it works out for you, genuinely. But by the same principle of getting all the ingredients, B&Q sell bricks, cement, concrete, bathrooms, paint, and wood. That wouldn't make me load up my boot with stuff to build my own house. Or another analogy, I have a pair of scissors in the drawer, but I let somebody who's qualified cut my hair. There is a difference between professional work and DIY.
Just as an additional note, I've read some of the things you plan to do to make your cake. I'd call us for some advice before you take the plunge with some of the steps. Just a bit of advice from one cake maker to another :)

im an ex chef and done countless cakes before... i used to be a chef in the officer mess in the army and have done very high class catering and baking... i also have worked in some fabulous resturants as a head chef after leaving the army ... i have many awards and qualifications in the world of food.... im using the "cake mix" as i have 3 weeks to make this and tbh cba making my own... my cake is puerly for show as a centre piece and couldnt give a stuff what it tasted like to be honest.... as long as its half decent by the time it gets cut ill be off on honey moon
nah dont think i'll ring for advice thanks ... as its simple... nothing i havent done before to be honest... i prob have played this down abit on this thread but ive made many many many cakes before yes prob not as big as 5ft but the principals are the same... im just not one for blowing my own trumpet or bragging or saying look at me im fab at this etc etc
so thanks for your in put but near 1000 pounds for 3 layers of polystyrne and 2 cakes and not iced any way like my design just very plain with a bow and my brooch and a string pearl is ludricus.... cost doesnt bother me i can afford to pay 10k for a cake if i chose to ... but im not paying a grand for polystryrene...
so thanks but im not building a house that would be stupid id break a nail... plus if i was building a house i wouldnt go to b&q cos if i was building a house id use a proper builders merchant not the local shop where they dont have a clue... ... im doing something i am infact trained in and have won competitions for ... i will show you some pics if you really want
im doing it my self cos i want to at the end of the day, i dont work and its fun to me ...
hope you check back in a week or 2 to see my finished cake :O)

tbh becky... am not after the most spectaulua tasting cake as long as it tasty and moist thats all that matter to me... what i want is a cake that has the wow factor a big display a focal point to the walnut drawing room to me thats what a wedding cake should be... so that when we cut the cake at about 7-8pm its a wow moment... i can afford to pay as much as i like for a weeding cake but i dont want to pay stupid amounts on polystryrene which is basically the majority of what the cake is ... never in this thread have i said that it will be the tatsing cake ever and to rival award winning bakers etc... i have said i want a wow cake that stands on a table and to be in total 7ft tall and which are will be .... and ill be buggared if im getting a cheap one from the experts because it wont be what i want... plus i thought my wedding my way... so yes im doing it my self not to save money far from it but because i dont see the need to pay that amount of money for polystryrene that they collect after wards and reuse on someone else .... yes i could make it from scratch etc etc but tbh i cant be bothered im doing this for fun more than anything to get the design what i want... i went to another cake maker and asked the price for my design that i did with swags and cherubs and for a real versaille inspired looking cake to match my theme and they said £1800... at the end of the day we will cut it and go on honey moon so im not that fussed as long as it is decent and tastes like cake then that will do me ... least my photos and people will remeber the wow factor about it and thats the design etc .... im all about show me... why have something small when you can go big and ott

All I'll say is, lets see the cake when it's done... I wasn't being rude, I was being helpful and just saying that you'd lumped all cake makers in the same way which I didn't appreciate. So you respond by going off on one? I'm sorry it's my first post, I only proposed a week ago, I guess I should have done it earlier to get my posts up, so that I have the necessary amount of posts to be deemed worthy of discussing cake ingredients with your highness...
Nice to see you're being a complete headcase about it anyway.
I'm sorry, I just don't buy a) your experience and b) your quals. Otherwise you wouldn't be so surprised about what cake makers use to make cakes. The products you bought have been available for years, and Why would you say recently "I know all the tricks now" because you'd know them already.
I can't wait to see how straight your cake is. BTW, I'll just put you straight... If you're thinking of making two tiers at the bottom as dummy tiers, and putting cake on the top of them, It does seem to make sense to a total amateur as you're have a straight base to work from. However, you might wanna consider your centre of gravity... Your base layers would have to be almost as wide as your cake is tall, because you're increasing weight as you go up, as opposed to decreasing it, which is how cakes should be made. Look in a science book, it's not just about buying boards and glueing stuff together. But what do I know, I'm just a cake maker, not the second coming of Gordon Ramsey like you seem to be. BTW, only one of us has got the guy on their CV.
Please post your cake for us all to see when it's complete, and by that I mean at the venue, cos no matter how straight you reckon it is, If you get it to the venue, and it's straight there, I'll eat the bottom two tiers myself.
As for the bit about "I could buy a 10 grand cake but I don't want to," How old do you sound? 10? I get more sense out of my 2 year old. I was trying to be helpful, but as you appear to be a vindictive bitter moron, Here endeth the lesson.

Oh for goodness sake, Mods can you please close this thread?!
As for you Englishdas I've checked out your website and have to say a lot of your cakes on there look appalling, one of the chocolate cakes on there had melted chocolate all over the bottom of it. If I paid the best part of £400 or more for that I'd be throwing it back at you!
Give Croc some respect, she has decided to make her own cake and has a good reason for it.
Can't wait until the day I become Mrs. Johnson :)
CommentAuthorenglishdas
Don't get on the wrong side of Croc? Why? I was trying to help and she went nuts on me. I just explained scientifically in my above post where her design has issues. I wasn't hammering her design, I thought, hey, here's somebody who a) has dissed my industry, but b) is gonna come a cropper if she makes her cake as she plans to.
I got both barrels.
Very sweet.
Glad you all seem to think it's entertaining, If Croc going off like a fire alarm makes your day, I'm just glad I could help, and with my above post, I think she'll go and make your day again. It's not at my expense though.
And still I gave her some advice for free, as she was buying her cake in pieces for peanuts. She might think that she can afford a 10 grand cake, but I've never met anyone yet who could buy a cake for 10 grand and decides to make it themselves.
I could get used to this flaming, I think I'll stay a while...
