    ladies, to those of you making your own wedding cakes or part of it, when are you doing it?? day before? how long can it keep?!

    I'm making my fruit part around 6 months before. Then making the rest the day before. However we aren't having our cake until the celebration party which is 3 days after the wedding.

    We're getting married on the friday so I'm probably going to start it at the begining of the week. Once the icing is on they last a good few weeks though so I could do it a bit earlier if I'm getting stressed!

    Thanks guys - I know fruitcake keeps but I'm not a huge fan so other tier/s will probably be sponge of some type and just wan't sure would it keep as well.

    My mum is making ours, the fruit cake she was going to make 3 months before, the sponge about a week before because of shelf life etc - even in icing it can dry out if made too far in advance. However, the cake decorating supply shop she goes to has offered to bake the cakes for her as they have a catering preservative which means the sponges can last 2-3 weeks perfectly fine - so all mum has to do is cover the cakes and decorate - she's doing the decorations in sugarcraft which can last for ages if kept dry and in an airtight container, so she's actually starting to make some of the flowers and decorations next week so she's got it done in plenty of time - when she gets the cakes and covers them, then it's just a case of assembling all the bits together- which sounds a lot less stressful last minute!

    That is good advice, I hadn't even thought about all the decorating... might be worth looking about ideas and maybe doing a practice run or two!

    definitely, she's even contacted someone who's going to give her one on one crafting classes so she can brush up and practice a bit in advance - she used to make cakes when she was at catering college and even did her own and friend's wedding cakes, but the last ones she made were in the late 70's!!

    I bet she'll still be amazing though! My Nanna was visiting us in Dublin once and she sat down at our piano, having not had a lesson in over fifty years, and after a few false starts played a piece of music!! Your Mum will probably find it's all still in her fingers!

    I am doing mine the day before and buying pre-made decorations so all it is is just putting it on the cake ready how I would like it. Hoping it will be pretty stress free as I am planning on using those chocolate pencils/cigarellos around the outside of each tier that way I dont have to be too anal about the icing! lol.xx

    Clever, very clever! Is yours sponge too? One of h2b's aunts did the icing for his brother's wedding last year so could probably get a hand with that bit :)

    Yeah it will be a 3 tier sponge (flavours unknown!) and possibly a seperate fruit cake for the older generations. That will be great if you could, I am far too fussy when icing and usually rope H2B in when Im icing a cake as it has to be perfect and he always clams me down, lol!

    I am having fruit cake so will probably make the cakes about six months before and then will ice them approx two weeks before the wedding xxx

    I've never iced a cake to an acceptable display level before so few practice runs may be necessary...oh well, more cake to eat as a result of practice runs!!
