    Just wandered if there are any brides that made their own cake, and how many days prior the day they started preparing? I'm making a sponge and red velvet 2 tier with lots of cupcakes. Any pics to show?

    Hi Maria, I won't be making my own cake but I do make cakes to order so I can offer you some advice:

    For the two tier cake you can make your rounds up to a month before and freeze as long as it is just the sponge then get them out two days before they should need half a day to defrost and then you can fill them and decorate them.

    The cupcakes I would recommend a day before or two days before if you can keep them in a cool, dry place. Cupcakes tend to have a shorter "shelf life" so I really wouldn't make them more than two days before especially if you are doing a buttercream topping, if you cover them in a fondant topping they will last longer.

    Thanks for the advice, that's really helpful :-) iv made lots of cakes and cupcakes for friends, but iv never frozen them in advance before although iv heard lots of bakers do this. Do they not dry out? How do you wrap them. I could do a practice run just to see how they defrost. Do you defrost still wrapped?

    I waiting till mine have cooled then wrap them in clingfilm so they are completely covered normally wrap about 4 pieces round and make sure they are frozen flat so they don't bent or get squashed.

    When defrosting I do it half and half, so its stays in the wrap and then I take it out so it doesn't get soggy.

    Hiya,
    I made my own cake. I froze the sponges but found it easier to ice them while still frozen. I did this 2 nights before the wedding. I suppose it would depend on how confident you are at icing (and if you actually remember to take them out of the freezer to defrost in the first place! Unlike me! lol) xx

    I made cupcakes for my sister's wedding this summer, we baked all day Thursday, the wedding was on Saturday. We stored them in various large airtight containers and they were still top notch on the day.

    Was fun but tiring and did take most of the day (we made 400 lol waaaay too many). It was a bit of a squeeze fitting it in with everything else - I remember taking a break to steam BM dresses - but should be fine as long as you have a rota for a long the bits that need sorting x
