    Hiya
    H2B and I are going for our first ever cake tasting session on Saturday (very exciting) and I wanted to make sure that I ask all the right questions and know what to check for (taste and texture go without saying). So far I've got:

    1. Available to make a cake on Sat 11th May 2013?
    2. Dairy free? Made in dairy free environment or in seperate part of kitchen to avoid cross contamination as I have an allergy?
    3. Size required for 100 people plus need top tier to take away and keep for Christening cake.
    4. Price (obviously)
    5. Delivery and set up costs?


    This company is on the reception venue's preferred suppliers list and according to their website made a b'day cake for Cheryl Cole (not that I believe she actually ate any of it - maybe a quick smell which prob made her go up one dress size).

    Any help and advice will be appreciated :)

    What about a question about the stand? Does your venue provide one or will there be a hire charge? x

    Our reception venue provide the cake stand and knife which is good.

    Ummm, H2B wants a traditional 3 tier cake but that's about all he knows lol.

    I hate fruit cake with a passion, just don't like it but I do know that I want 3 or 4 tiers and that two should be traditional fruit (I hope they do that one dairy free), the bottom and small top tier should be traditional as I want to keep the top tier for our first childs Christening and most people like fruit so the bottom tier can be that (plus it's heavy so will need to be on the bottom if it's of any significant size. I quite fancy chocolate and/or coffee for the middle tier(s), these can be made dairy free as I make them myself at home. Does anyone know if red velvet can be made dairy free? Love the idea of red (will match the colour scheme).

    Would like it plain white iced (traditional).

    I have a few ideas. The first is that I saw a pic of my parents wedding cake and it's horseshoe shaped, two tiers (they had a small wedding) and have horseshoe shapes iced around it too. I thought it was really pretty and wanted to copy it however H2B pulled a face when I mentioned it.

    The other idea is we have the traditional 3 or 4 tiers, round or square, then just have it plain iced or with horseshoes iced around it and then have red roses made from icing to top it.

    I don't want anything too flamboyant - my sisters cake last year was a show stopper! Stunning and was a real talking point so I'm not even going to attempt to do something on that scale.

    id agree ask about the stand and knife, at least then you would know if you need to purchase your own and are thegoing to be delivering the cake on the day or does it need to be picked up and keep there phone number in your fone and bridesmaides phone just incase there are any problems at all, ( sure they wont be) but doesnt hurt to be prepared xx

    The portions for 100 people are based on a 1" by 2" slice so just remember that.. you could always have more tiers but have "fake cake" which obvz cant be cut but decorated the same way for abit of a fancier cake for amazingly reduced prices.
    Walk in and make it sound like you know what your going on about you technical words and they are less likely to fiddle you.

    Ask for sizes of each tier, you dont want to be fiddled :)
    Also ask what supports they intend to use,
    Red Velvet can be made dairy free as its just red die in it really and abit of coco powder :) Its just the frosting you will need to mention as generally its cream cheese used with it.
    If you have a picture of your parents wedding cake take that along with you so they can see they horseshoes your on about.

    Also have you thought about having red roses inbetween the tiers.. I think that would look stunning with maybe foam red roses which can be picked up fairly cheaply. (have a look on google) It would be a talking point without being too over the top.

    Remember to ask if you booked by friday would she give you a reduced price.. mention a cheaper quote (a little white lie doesnt hurt) lol and mention you have 5/6 more tastings that will be conducted this week and friday is your last one.

    I like the fake cake idea, thanks hun. Good advice on other tastings/quotes already.

    Realistically, how much is an average 3 or 4 tier traditional cake for 100 people? Just so I don't give one right out kilter with the norm? xx

    any cake can be make dairy free (use soya milk instead)it is just really difficult to make a cake egg free as it is hard to bind without them.

    I'm ok with eggs, just no milk products. I bake my own cakes at home (I don't use any milk at all) using sunflower margarine (there are a few in the supermarket to choose from). They're always really moist and yummy, I just don't quite have the talent to do huge ones lol.

    Perhaps think about if you want your tiers separate and held up on a stand or if you want them sat on top of one another. If you are thinking sat on top of each other, check that they have thought about how each tier will be supported so they don't sink.

    Do they put rods inside the cakes so they don't sink when piled on top of eachother?

    Had e-mail from the venue today that said the cake stand they provide that's included in our package is round - so I guess we're kinda limited to a round cake?

    Mmmmm, yummy, I fancy chocolate, coffee or red velvet if they will do them dairy free. The main thing for me is I can eat it without having an allergic reaction and it tastes delious and is moist ............I'm salivating at the thought ;)

    Did everyone go to a few cake people before ordering or did you order from the first person you saw if you liked them? My sister went with their first person (although they also did this with their photographer).
