    So we have picked our cake
    One layer lemon cake
    One layer carrot cake
    One layer choc fudge brownie cake

    Prob is h2b is allergic to nuts and been informed the cake makers use marzipan(almond) to bind the icing to the cake... H2b says he is happy to go ahead with the cake and not have any on the day, but was just wondering does anyone know if all cake makers do this, I've spoke to three that all do... Also mil and fil are buying the cake, the woman we chose is their friend so said that she'd do it for £200 which is a big saving on our budget tht we can now use elsewhere, am I worth still looking round or should I just stick with her? Mil says to see if she will make a separate little cake sans icing for h2b so he's not left out ...??

    It seems a good deal and if your h2b is not brothered then I would go ahead but make him a separate cake. My h2b doesn't like sponge cake which is what we are having so my mum is making him his own 'grooms cake' which apparently is an American tradition anyway xxx

    I make cakes at home and only ever cover in fondant!
    the only time ive seen a layer or marzipan is when you cover a fruit cake!
    I even did a cake deco course that showed us when covering a cake and what to use! Yes ok we did it with marzipan but she did say normally done with fruit cake.

    If you tell them dietary requirements they should be able to adjust to your needs. If they say they cant then thats absolute tosh luv, honestly you dont need marzipan to bind to a cake.. the binding agent is either water, buttercream or apricot jam depending on what cake and what layer!

    With h2b's parents buying it, they'd budgeted £500 for the cake so they said we could put the extra £300 with the other £2k they are giving us so gives us possibly the flowers money as well, x

    I don't think she works with buttercream...as I initially wanted a three tier rustic looking cake that just had buttercream on it spread 'messily' but she didn't do it, said she only did fondant cakes... Maybe I should go bk to her x

    Our cake lady's daughter has a SEVERE nut allergy, so she doesn't use nuts in any of her cakes; never heard of having to have marzipan before. I'd shop around and see what other people say.

    well they tend to put apricot jam on the cake to stick marzipan too. but with fondant icing you use buttercream or some sort of creaming technique to stick the fondant to the cake. but yeh, explain you have dietary requirements such as nut allergies and should be able to come up with an alternative...x

    Oooh, now that sounds yummy and the pic looks lovely!

    Our cakes I don't think are coming with marzipan as the ones we had samples off didn't, they just had the icing on and the icing was stuck to the cake with lemon curd for the lemon cake.

    I've made wedding cakes professionally and never ever used marzipan on anything but fruit.

    I think not only do you have the worry of nut allergy but think how lemon and marzipan are going to taste, not a good combo and carrot should always be cream cheese frosting with fondant again not marzipan cos it just don't taste right.

    If they were prepared to spend up to £500 then shop around, you can easily get 3 tiers for that kind of money. A good cake designer can copy that cake and you will get exactly what you want, hubby can eat it and your guests will love the taste

    I am a professional cake maker and I only ever use marzipan for fruit cakes and only if I am asked to do so

    My h2b has nut allergy and so when organising cake and menu will have to be careful. Just remember evenif you get rid of the marzipan that carrot cake usually has nuts in it also. I tend to exchange the nuts in carrot cake for dried fruit xx

    When I do a fruit cake I tend to do a thinner layer of fondant (white icing) that will stick to the cake then a thicker layer for the outer layer.

    Ooohhh your cake sounds yummy. Can they not do a butter cream or cream cheese icing? The cake would taste better with one of those flavours anyways.

    If H2B isn't bothered I wouldn't worry if its saving you so much money. I am wheat intolerant so can't eat cake unless it's made gluten free. The cake companies we have spoken to keep telling me they can make me a gluten free tier but i'm not bothered at all. I don't want a whole tier to myself and eating a 2 inch square of sponge cake will not be the most important part of my wedding for me lol.

    My h2b is in charge of our cake wiv his sister so kindly got for us, but I do not like cake and won't b having any on the day!! Or dessert,I'm not a desserty person!!! Just thought I say lol x

    She's a fully trained cake maker so I'm now a bit confused as to why she's said marzipan if there's lots of other options she could use..... Think I'll have to email her x

    Marzipan is what is traditionally used for fruit cakes, Normal white icing (no nut products used to make this icing) is what is used for normal sponge cakes. I am also a fully trained cake maker and decorator
