I have booked a three tier cascading roses cake, two layers of sponge and a layer of chocolate. I'd like to keep a layer as tradition but can this only be done with a fruit layer? And if so do I get an extra tier or just change one of my original layers and risk their not being enough cake?

I think, but i'm not 100% sure that it does have to be fruit if you want to keep it. Logically it must be as sponge doesn't generally keep that well where as fruit does. Why don't you have the smallest one the fruit?

I think if you are going to keep a layer then it will be better if it is fruit, most sponges do have a limited life. It depends if you need another layer or not, if you have enough cake for your guests with just 2 layers then have your third layer in fruit so you keep that, have 1 layer sponge, 1 layer choc for the guests. If you need all three layers for your guests then you could have another small cake made in the same or plain (depends on your budget) style in fruit. xx

Can a fruit cake he added on top tho of the other layers or would it be too heavy?

Ask the person you've ordered your cake from hun, I think sponge can be frozen. If you want the top tier as fruit cake then yes it can go on top of the sponge (this is what H2B and I are having, 3 layers of sponge in different flavours and a small fruit tier on top of them). If it's a proper cake maker they will put rods inside each of the tiers so that they don't collapse under the weight. xx
