have you checked out trip advisor?? they have reviews but hotel guests so that might help a bit? Goole is a godsend when it comes to info about what there is to do abroad. It is a bit of a nightmare sifting through everything, but it is where I would start x

I thought flights got released 12 months before
I went to Penang a long time ago, its really good for culture and food but not the best beaches, i think there are better islands if thats what you are after. I think theres lots of opportunity to do dual breaks eg a few days in kuala lumpar then time on the beach to add a bit of variety.
Borneo is part if malaysia and indonesia (and v small bit is brunei) have you considered there?

There are so many people out there who will tell you
    what you can't do.
What you have to do is turn around and say, "watch me"!!

I went to kl and penang a couple of years ago and wasn't that impressed considering how long it took to get there (part of that is who I went with though) we stayed in a secure apartment complex that was in the middle of the slums and had security patrolling it 24/7 then went to a hotel in penang that had ants in the bed. It wasn't very warm either. Great for shopping though.

My cousin has emigrated to Thailand and lives in Bangkok, he absolutely loves it there. Possibly an idea to travel Thailand? A few days in Bangkok, few in Phuket maybe? It looks lovely, we're having a look at the possibilities of getting married there at the moment :) NO idea on malaysia, but agree with Nic - Borneo would be amazing if you are both into wildlife? Maybe go on a safari type thing into the jungle etc?
