I am looking to make and decorate my own wedding cake. How long will...

I am looking to make and decorate my own wedding cake. How long will wedding cakes last? I do want it to be as fresh as possible however in terms of planning time to make and decorate in the days leading up to the day I'd like to ideally make it up to a few days before hand. Or am I looking at having to make this the day before? Thanks in advance

hi there. it depends on if you are making fruitcake or sponge. fruit cake i would make up to 6 months in advance and feed it every 2/3 weeks. sponge cake don't make more than 7 days before. give yourself enough time. cakes need to be cold before you can ice them etc. if your marzipaning then you need to leave it 24 hours for the marzipan to dry on the cake before icing, then 24 hours for the icing to dry once on cake and then you can decorate it. idealy you want the cake finished the day before so it has 24 hours for drying and setting. many different things out of you control can effect cooking and drying so give yourself enough time to get past any hiccups. you might find youtube extreamly helpful as they have endless cake turorials on there. good luck and congrats. sorry about the essay :-)

I had my last fruit wedding cake for a whole year and a bit and used the top tier for our first christening! They get better with age because the alcohol preserves it! Im havingva mixture this time so the sponge needs to be eaten within a week , what a shame!!!:)
