Simple Weddings abroad

I'm nearing 40 and suffer terrible social anxiety and have a very interfering MIL who tries to take over. We have two young kids (under 3) and running away to do it in private isn't an option as we've had upset from our Mothers. It isn't an option to stay local as my partner is close to his auntie, Uncle and brothers family and if we invite them then I have to invite my side and my family is large so this automatically turns into a big wedding I didn't want. An idea I had is to marry abroad somewhere in Europe so it's a quick flight and in a large hotel I won't feel in a confined space with anyone feeling centre of attention and people can go about their holiday and I can leave it as an open invite of whoever wants to come and come with zero upset. I don't want a big ceremony with all the cake and first dance etc just something lovely but casual and over quite quickly but something to entertain the guests. I don't even know where to start looking for something like this. Can anyone help me on where is best to look for something like this and who to contact ? Thank you
