I got married at Dundas Castle, the team are amazing there and could probably over throw a small country with their organisation. I didn't need to worry about a thing!! The view was stunning too!! And also very private.
Depends what kind of thing you're after. We got married at Barns Ness Lighthouse, although it's not a designated venue as such you can do it yourself. There are a few large houses available on airbnb etc that will let you do your own wedding. Also, try the National Trust for Scotland and Historic Scotland, they both have historic sites that are available for hire for a wedding.
The Scotts have a function hall they use for weddings, you can have your ceremony and reception
