Both me and my partner have difficult family's and they argue a lot and he doesn't get on with his family very well and mine just annoy me but we are still stuck with having the family wedding or flying off somewhere just the 2 of us and some witnesses how do we choose?

Do whatever will make the 2 of you happiest x
What about having the legalities done with just you two and 2 witnesses (who do not even have to be anyone you know). Then you could have a party if you wanted to involve family, or just go on a wonderful honeymoon. (I would do the latter)
You need to do whatever suits you both the most. Maybe write down the pros & cons of doing either idea x
