    Hi everyone, Hope everyones well
    Just quick question has anyone made a homemade wedding cake? the reason i am asking is me and H2B had discussion this afternoon about cakes. He doesn't like fruit cake and when we looked at pricing for other types they seemed a really pricey and with our budget we wanted to look at other options. So he came up with the idea of me making out own wedding cake nearer the time since he loves my baking. The thing is i have done all sorts of cakes before but never anything like a wedding cake so i am just wondering if anyone has any tips or advice to make a wedding cake. Perferably one thats got a jam and cream filling (H2B Fave). Ive tried googling this sort of cake making but only seem to find just creamed wedding cakes and its basic fast videos so nothing really in detail.
    Since its going to be a while before our day i just wanted to do a few trial runs of this sort of cake baking to see if its going to work or not or if maybe trying other options would be better. so any advice, tutorials and tips would be much appreciated.
    Like how long before my day would i have to make the cake to stay fresh, Freezing the cake bases before icing?, how would i do a jam and cream layered cake without the filling oozing out the sides as the other layer are added.

    Some of the supermarkets do ready iced sponge cakes at really good prices, my friend had hers made by a supermarket i think it was sponge on one layer and walnut for the other it came plain iced and she put her own decorations on it, it looked lovely. Other than that i thnk there is a cake decorating weekly magazine thats just started, maybe that would help you xx

    I have made two of my friends wedding cakes (hmm but when it comes to my wedding where are they with the cakes, hehehe lol) They wanted a top tier cake which was fruit so i decorate at leisure and then i made 90-100 cupcakes which i iced and decorated with mini hearts, roses and 3d butterflies (different cakes)

    My h2b will be making our own cake, i am more tempted to do 4 tiers in square, i had a dream that my h2b choose square and when i told him my dream he said yes to square!
    When trimming the tops of sponges to make them super flat use a serrated knife and then use buttercream to smooth the sides and fill in any gaps before icing, i think that was right. I got that tip from watching wedding tv lol!

    Im worried about sponge cake needing to be fresh although i do know professionals freeze cake layers.

    Thanks for the suggestion i did see a cake in one of our supermarkets that looked lovley and was sponge layered nice icing and loving rose topping straight up store buy, but knowing my luck by the time my wedding comes it wont be avaliable anymore plus i thought getting a cake stand for that type of cake maybe an issue as its squared and all one sizing and i'd be scared incase it toppled over layering three of those ontop of one another (knowing my luck it would lol) so when he suggested me trying baking one i thought well i could give it a go least i can say i tried even if it fails i got plenty of time to go lol then can refer back to the shop ones.

    See i was thinking along those lines, One main cake and the rest cupcakes as i'm pretty good with making cupcakes, Or maybe 3 layers but different kinds, however ive never made a fruitcake before (As h2b just doesnt like it) so i'm little dubious there, i have read that fruitcakes can be frozen but sponge not so much so i'm not sure what might be best. Thats why i think might give it a few tries and go from there.
    I'm just worried about sponge cake version like yourself i would have expected it to be fresh, and dont want to be up half the night before the big day baking it incase it goes pairshaped especially if it needs to be fresh.

    Fruit cake is best made a month or two in advance, no freezing required! I took over a week decorating my friends top tier cake. The cupcakes i made 2 days before the wedding and boxed them in cake boxes and stacked them in the fridge (it was a hot day) had to empty and take the bottom shelves out. I was so worried they wouldnt taste amazing but actually they did! I was so pleased and thje bride was thrilled!

    Another friend of mine paid around £450 for her 3 tier sponge cake it tasted pretty bad, rather druy and tasteless i would have been so upset. I have high cake standards!!

    My mum wants me to have an all fruit cake as she doesn't like sponge wedding cakes, but i want all different flavours :-) xx

    My mum is going to make my wedding cake for us. We are having two tiers that are fruit cake, and one sponge. Not sure on the order yet due to the weight on the fruit cakes etc.

    But mum has said she'll be baking the fruit cakes about 2 months before the wedding so that they can mature (or something like that.. she's well into her cakes) and once they are sorted she's going to cover those with marzipan and icing and store them away to keep nice. With the sponge cake, she is going to make that a couple of days before the wedding and cover it as soon as it's ready to, so that the icing stores the freshness and keeps it nice and moist.

    Then that's where I come in... we are going to decorate it together. I'm not sure on the design or anything yet, but it's not going to be anything too fancy. Just something really nice that'll be great for me and mum to work on together.

    Obviously, mum helping me with this is a massive help. As if I tried to do it myself, I would probably stressing the week running up to my wedding. I'm sure you'll figure something out Reidy :)

    Have you thought about giving it a real home made feel and making something like a raspberry layer cake instead? You can be extra decadent and spread the layers with chocolate spread before adding the raspberries and cream - the main fiddly bit with traditional cakes is the decoration and time to make sugar decorations - however, it is possible to buy things like sugar roses etc already made, they're usually by a company called Wilton and you can look up your nearest cake supplies shop :-)

    Hiya

    Waitrose do the most amazing and yummy looking cupcakes and I've seen M&S do wedding cakes too in different flavours.

    A family friend had his MIL make their wedding cake and it was simple but pretty ...........I thought they'd paid at least £350 for it from a professional cake maker! Just had royal icing on it with gold ribbons around the tiers and then some rose petals scattered around it.

    Another friend had 3 friends make 3 different cakes for their wedding which was a lovely touch.

    My sis and I discussed me making her cupcake tower for her wedding last year as everyone loves my cakes but when we thought about the time it would take to make over 100 plus a small top tier on top of all the other things I was helping her with as the Chief Bridesmaid and organising family coming from abroad she ended up just getting a professional to do it for her.

    I would suggest that if you are looking to have a homemade wedding cake that a friend or family member takes responsibility for this as it will be the last thing you need the stress of amongst everything else that will be going on in the 12 weeks leading up to the wedding!

    I'll be making my own cake. I was going to get an M&S one but the fruit cakes have nuts in so its a no go. Am making the fruit cake this week and letting it mature. As h2b doesn't like fruit cake I'll be doing one tier of lemon sponge cake made a few days before the wedding (as a rule you can freeze sponge cake but its not the best, also if you freeze it for half an hour or so before cutting and icing you get a better result, less crumbs!) and the top tier will be a chocolate-cherry cake. I know it sounds like a big thing to do but the chocolate cake keeps really well and can be done a week or two before, and it will be something to keep me busy.

    have u looked around your local schools for a night cake course? i did this last year and it has really helped me alot!! only cost me £30 quid for a 10 week course u do need to buy a few bits though but they all come in handy when ur making ur wedding cake i'm going for a four tier wedding cake and having chocolate, jam and buttercream,carrot cake and lemon all my cakes have been tried and tasted by family and have done over 15 for friends birthdays. i'm looking for ideas for how i want my cakes to look!! i refuse to pay so much on a cake when i can do it better myself!! we will be serving this as our dessert with our evening buffet xx

    Ive been contemplating doing our cake simply because of budget but im still not sure, maybe a trial run or two would help me decide (and i get to eat lots more cake hehe) You can get all sorts of different cake stands now so it doesnt need to be 3/4 layers all on top of one another.

    A.Bird2b the choc cherry cake sounds lovely, dont suppose you could point me in the direction of a recipe for it please??

    I am going to be making my cake, because I haven't found anyone that can do it cheap enough. Everyone said about 800-1000pound because of the design that I want.

    My H2B's Mum is making our wedding cake were having 4 tier's 2 fruit and 2 sponge layers with roses on the outside of the cake. She is going to so much effort i'm just hoping it comes out how I a picturing it in my mind x

    Theres an ex member on here who made her own cake that was STUNNING
    Was around 5 or 6 tiers I think cant remember now lol, the top two or three tiers were dummy cakes but it was all amzing!
    She did a diary while making it so Ill see if I can find it and bump it up

    my mum is making mine im having 6 tiers

    I've asked her advice for you as she said you need to make a madeira cake, not alot of filling and you must use marzipan under icing. There is no reason why you cant freeze it if you dont want to freeze it dont make it anymore than 4 days before your wedding.
