The problem i'm having is the times and dates of the open evenings/days as between Gemma and I, we work impossible hours weekdays and have both Saturday and Sunday off. Weekend wedding Fayres in Newcastle is VERY VERY few and far between.
Does anyone have any advise on the venues?

You could always view separately then bring all your ideas together? Then you aren't worried about the others reaction, just a thought if you are struggling to both go!

I would advise viewing them independently especially considering your shift restriction. A wedding fayre does not necessarily mean you will see it in its "wedding glory" only that it is an opportunity to meet suppliers that are in the vicinity or commonly work with that venue so if anything it will just be very crowded and a mismash of different chair cover, linens, Cakes, caterers etc.
Have you tried just G@@gling the venues with the word "wedding" next to it? eg if you g@@gle Jesmond Dene House Wedding you actually get a lot of images of weddings that have taken place there.

I agree with ladies go and see them individually as you want to get a 1on1 meeting plus get a vibe from the people who manage it and take a list of questions your going to ask. And don't be afraid to ask all questions then come away talk about it and go for a second look if you want to. We did with our venue mainly as the wedding organiser changed person so we wanted to meet them and get a feel for them and have us chance to ask new questions and that

They will move heaven and earth to find a time that will suit you, as they want you to have your wedding with them. I always found wedding fayres in Cardiff a pain as they were almost always on Sundays, which didn't suit me as I'm heavily involved in church. By the time an 11:00 service finishes, you have tea afterwards and chat to everyone, and have lunch, it doesn't give long to get to the fayre and look around before it closes. I went to one which seemed to be almost entirely photographers, cars and suit hire companies, and told me nothing about the hotel that hosted it (not that we were planning on using that hotel anyway). Much better to see the venue separately. We made an appointment to see the hotel that we were planning on using, and the wedding planner came down to meet us, showed us the room, answered questions there, and then took us up to the bar to have a drink and discuss further. You'll benefit a lot more from something like that.
