    Hi all!
    Just a quick one, I've always wanted a cupcake tower as my wedding cake, I have spoken to my cake lady (she's made loads of birthday cakes for me in the past) and for 65 cupcakes and a 2 tier cake to top the tower she recons it'll be about £350. Whilst I know that's already incredibly cheep I've been thinking the past few days about saving a little bit more by making the cupcakes myself, as I want Lemon and Red Velvet cupcakes I figured I could just get a load of packet mix and do it that way (2 of my bm's are into baking so can so some fancy piping on the top to make them look pretty). I'll still have my cake Lady make the 2 tier cake as this will be the one that is cut so I want that bit done properly.
    Has anyone done this for their wedding? Did any guests notice that the cupcakes were cheep packet mix? Did it work out much cheaper? Also when did you make the cupcakes?

    I was going to make my cup cakes but my mum said that she would pay for someone to make them. My moh made the cake to go on top but I was only going to get a plain cake from the supermarket. I eased the cost of the cupcakes by having brought cupcake cases myself and the sugar flowers to go on top. The cake maker only had to make the cakes and out the icing on top.

    She made them in the couple of days before the wedding, my mum picked them up the day before,

    Its a lot for you to do just before the wedding.
    I would try making a batch of both now and freeze them the defrost, ice and see how they taste. I have frozen cupcakes and sponge cakes before just never a packet mix so not sure how that would work / taste.

    That's another one of the other reasons I'm thinking of doing it myself GF I've just bought some beautiful cupcake wraps so the cakes themselves won't have to be anything special just have buttercream piped on top and maybe some edible glitter.
    Emily I am worried about time (especially with the date that week is always hectic without throwing a wedding into the mix).... however if I have my 2 bridesmaids make half each (about 35 each), we are all staying in the manor house the night before so we can all chip in with the decorations before we sit down with a glass of wine. Will have to ask them about this tho.
    Just looked at prices for the mix in the supermarkets it's roughly £2 to make 6 cupcakes (so roughly 30p each) so it works out at less than £20 for the mix, add on the ingredients for the icing, some glitter and what I've already paid for the wraps (£26 oops) it works out less than £60 in total.
    I think my main concern is going to be the quality, the guests won't know there packet mix tho will they?

    (I just sorted out my PU so thought I would see how it all works, these are the cupcake wraps I've ordered having them in black, silver and white!!)

    I think packet mixes will be fine if you have time to do it. I'm glad mum offered to pay as in the end I was at u I all week running up to the wedding.

    The basic mixes are good, we use them a lot, and nice and cheap.

    I love some of the Betty C mixes - they're easy to do (usually baking with the kids) and always come out soft and moist. If you feel you guys are going to have time then I'd go for it. The cake wraps are lovely.

    I had five friends each bake a cake for my wedding cake, then we got someone good at icing to decorate them all. We didn't stack them, each one had its own board. I would agree with Emily that it's a lot to do in the final run-up to the wedding, but if you can get away with doing them a week or two before it could work. Otherwise you'll just need to plan your time very carefully. You could also have a few friends help you out. I don't think any of our cakes were packet mix, but they were all made by amateur bakers, albeit capable ones, and no one seemed disappointed with the standard. I think one of the sponge cakes was made about a week in advance and it was still fine on the day. The fruit cake obviously could be done before, as they keep longer.

    Thank you for the ideas ladies! My Fiance wants a cupcake tower. I agree with everyone else, if you an get some friends to help it will take a lot of pressure off of you.

    I would get a friend to make a batch and also make a mix batch and compare- I have to be honest I'm not a fan of mixes- see how the mix ones freeze and defrost and taste too- good idea to make them if you have the time xx
