So I'm getting married at end of September and I'm going to bake my own wedding cake, this will just be a plain sponge but I'm wondering if anyone has done this if so how long before the big day did you bake it. Thank you?

You could bake the sponge a few weeks before and freeze it. It will still taste just as fresh. If you arent sure do a test run. Defrost it 48hrs before and decorate once fully defrosted. X

I wouldnt it may collapse and go watery and flavourless. I would bake a couple of dayd before then keep in airtight tins . Are you icing the outside? The quicker you cover the sponge the better , and moist it will stay

It shouldnt fall apart or go soggy if sealed up tight. Use lots of clingfilm and make sure its cooled down completely before you bake it. A lot of professionals reccommend freezing cakes for a ease. With practice it should be fine. X

I'd just freeze the sponge's then decorate the day before ...only having two layers and I'm a pretty yummy baker haha..I just see no point paying someone to bake it when mine taste's better ha also it be cheaper. But I've only ever done bday cakes and my sisters novelty hen cake 😁. Fingers crossed or it be tescos finest 😀😆. Thanks all. X
